INGREDIENTS:
- Cut out sugar cookie recipe (I used this one because it makes thick cookies that hold their shape. It has a bit of a biscuit-like taste to it, but when you add the frosting, they’re delicious).
- Yellow buttercream frosting
- Royal icing (black, pink, white, and red)
- Piping bags (for each royal icing color)
- Piping tips (find one with a small circular opening – #2 works well)
- Coupler
- Cookie cutters (circle and heart shaped)
- Parchment paper
- Tape
- Emoji face printouts (photo should be about the size of the cookie you’re making)
STEP ONE:
Make the sugar cookies. I used the same sized circle for each of the faces, then used three different sizes for each of the hearts (the smaller hearts will become the pink double heart emoji). Let the cookies cool completely.

STEP TWO:
Tape your emoji print-outs to the counter. On top of the pictures, tape the parchment paper tightly on top. Lightly grease the surface.

STEP THREE:
Using your piping bag (and the tip), trace the facial features with royal icing. You should only need the white, red, and black colors for this. Be sure to get the eyes, mouth, glasses, and hearts. Royal icing can take awhile to dry, so make sure you don’t touch it until it’s hardened. Seriously. Resist the temptation.

STEP FOUR:
Fill in the heart cookies. Because these are being decorated with royal icing as well, they’ll need time to dry. Start by tracing the outline of the cookie with the icing. Then in a back and forth motion, “flood,” or fill the shape with icing. If there are any air bubbles, fill them in with a toothpick.

STEP FIVE:
Whip up the buttercream frosting. You can use any buttercream frosting you like, just make sure it’s a deep yellow, like the emojis. If you add a little bit of orange food coloring, that helps get you the right color. You know, like the color of dehydrated urine. Is that gross? …Sorry. I forgot you’re eating these.
STEP SIX:
Put the frosting into a baking pan (you may need a couple). Make sure the frosting isn’t TOO thick. Go for ¼ inch. Then stick the pans into the freezer and let the frosting chill all the way through.
STEP SEVEN:
Once the frosting has set (and I mean SET, like that thing got pulled from the tip of Mount Ice Snow and Sleet), use the same circular cutter that you used for the cookies, and cut out sections of frosting. Use a spatula to remove it from the pan, and then stick the frosting circle to the cookie. Feel free to use a little bit of frosting as glue, should you need it.
STEP EIGHT:
Take your royal icing features (only if they’ve set!!!), and make the emoji face. Be extra careful, because royal icing breaks very very VERY VERY easily. Very easily.

And that’s it! How cute are these? You can either give them to your boo, use them to woo, or keep them for YOU.
Very clever, Nicki. Very clever.
But seriously, these are a nice change of pace from the regular candies and chocolate covered strawberries. What better way to show your emotion than with emojis? I can’t think of anything.

If you liked these, leave a comment below! And I’d love to know what all of you made for Valentine’s Day. Whether you’re single or taken, enjoy the holiday. And if worse comes to worst, you can always hug your dad.
Happy Valentine’s Day! (almost)

Valentine’s Day will be here in less than a month. I like Valentine’s Day. And being a hopeless romantic, I’m always expecting Prince Charming to fall at my feet with flowers, a diamond ring, and confessions of his undying love for me. It’s actually never happened, though. I can’t figure out why…?
So if you’re like me, you can eat cookies instead. Valentine’s Day Emoji Cookies.
I’ve always wanted to do an emoji theme, and they have some cool romantic faces and symbols that fit right in with the holiday. So instead of including the shooting star, the policeman, and the airplane seat, we’re going to stick to five main emojis:

*I threw in the nerd because, well, who doesn’t love a nerd on Valentine’s Day? They always seem to try the hardest to win your love.
